Ingredients
For the truffles:
24 ladyfinger biscuits
5 tbsp icing sugar
200g mascarpone cheese
6 tbsp strong espresso or coffee (adjust to taste)
Cocoa powder, for rolling
Optional: Simple soft ganache (1:1 chocolate to cream) for filling
For the coffee mascarpone whipped cream:
350g whipping cream
Icing sugar, to taste
1–2 shots espresso (adjust for desired coffee strength)
3 tbsp mascarpone cheese
tiramisu balls served with cream
Method
1. Prepare the truffle base
Crush the ladyfinger biscuits into a fine, sand-like texture. Ensure there are no large pieces.
Mix in the icing sugar evenly.
Add the mascarpone cheese and espresso, mixing until a smooth, pliable dough forms.
2. Shape the balls
Roll the mixture into small, bite-sized balls.
Optional: Place a small amount of ganache in the center for an extra creamy surprise.
Roll the balls in cocoa powder until fully coated.
Refrigerate while you prepare the whipped cream.
3. Make the coffee mascarpone whipped cream
Beat the whipping cream with icing sugar and vanilla until soft peaks form.
Add espresso to taste and 3 tbsp mascarpone cheese. Mix until smooth and creamy.
4. Assemble and serve
Serve the alongside the coffee mascarpone cream and the chilled tiramisu balls.
